Menus include Continental and American dishes, plus spa cuisine from Canyon Ranch. The Grand Dining Room will be open for breakfast, lunch and dinner. Toscana will feature three illuminated, etched-glass panels and Italian specialties, many of them family recipes handed down from Oceania Cruises’ staff and crew. It will be open for dinner, and reservations are suggested. The Polo Grill will serve cuts of prime, dry-aged beef, as well as chops and fresh seafood. It will be open for dinner, with reservations suggested. Jacques by Chef Jacques Pépin will be a French bistro open for dinner, with reservations suggested. Red Ginger will serve Thai, Japanese and Vietnamese cuisine in a contemporary setting that features three Buddha statues carved from a single piece of backlit glass. It will be open for dinner, with reservations suggested. The Terrace Café will feature indoor and outdoor seating and buffets for breakfast, lunch and dinner. Waves will be a relaxed, open-air brasserie serving gourmet burgers, swordfish, chicken and other grilled items, as well as a salad bar and homemade ice cream bar. It will be open for lunch. Baristas coffee bar will adjoin the library and will serve Illy espresso and cappuccino, plus homemade biscotti and coffee cake. It will be open throughout the day. Two venues will be available for wine dinners and private dining. La Reserve by Wine Spectator will host tastings during the day and seven-course pairing dinners with premium wines selected in consultation with Wine Spectator editors. A charge for premium wines applies for tastings. Reservations are required. And Privée will be a 10-seat dining room with selections from the Polo Grill and Toscana menus. A room charge applies, and reservations are required. The Riviera also will feature a Bon Appétit Culinary Center, which will offers hands-on cooking classes with a changing curriculum.
